Hu Jiang is a current postdoc in Erin Tripp’s lab in EBIO. Before moving to the University of Colorado Boulder, she obtained Master’s degree in Microbiology and a Ph.D. in Food Science at Nanchang University of China. She is particularly interested in the study of food safety, nutrition, and microbiology. Hu is currently working on lichen biology. She is separating and cultivating the algae, fungi and bacterium from lichen. In her spare time, Hu likes historical and cultural documents, and she also likes cooking with hopes of making nutritious meals as delicious and convenient as McDonald’s.
